Sour Cream Enchiladas Recipe

This Sour Cream Enchiladas Recipe makes yummy enchiladas that are super easy to make. It’s easy to add your own variations to satisfy everyone in your family!

Ingredients

1 can enchilada sauce
8 oz. sour cream
8 oz. shredded cheddar cheese
12 corn tortillas

Instructions

  1. Preheat oven to 350°.
  2. Spray a 9×13 pan (or one slightly smaller) with cooking spray.
  3. Place a tablespoon of sour cream and cheese in the center of each tortilla.
  4. Roll up each one and place it in the pan.
  5. Pour enchilada sauce over it all.
  6. Spread the remaining sour cream and cheese on top.
  7. Cover and bake at 350° for 20-30 minutes (or 250° for 45-60 minutes).
This recipe serves about 4. If you have hearty eaters, you may want to double or triple it.
 
 

Notes

You can make this in the morning and let it sit until you are ready to cook it. Some people like to include cooked hamburger, onions, chicken or green chiles along with the sour cream and cheese.

Homemade Garlic Pickles Recipe

Ingredients

Units

2 heads of dill
1 clove garlic
2 Tbsp. pickling spices
1 hot pepper, cut in two
45 cucumbers, sliced
1 cup water
4 cups vinegar
1/2 cup salt, non-iodized

Instructions

  1. Mix first three ingredients.
  2. Divide and place into 4-5 pint-sized jars.
  3. Add 1 piece of pepper to each jar.
  4. Pack sliced cucumbers into jars.
  5. Boil the last three ingredients.
  6. Pour over the cucumbers.
  7. Refrigerate several weeks before serving.
*These homemade garlic pickles are great with hamburgers.

1 cup mayonnaise (low-fat may be used)
1 cup buttermilk
2 Tbsp. green onions, minced (tops only or chives)
1/4 tsp. onion powder or 1 Tbsp. fresh onions, minced
2 tsp. parsley, minced
1/2 tsp. oregano
1/4 tsp. garlic powder or 1/2 to 1 garlic clove, finely minced
1/4 tsp. paprika
1/8 tsp. cayenne pepper
1/4 tsp. salt
1/4 tsp. black pepper

Instructions

  1. Combine all of the ingredients in a container with a lid.
  2. Refrigerate before serving. Makes 2 cups.

For Ranch Dip: Use sour cream or yogurt in place of buttermilk.

Ingredients

Dry Mix

2 3/4 cups all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cream of tartar
1 1/2 cups sugar

Ingredients To Prepare The Mix

1 cup shortening or butter
2 eggs
1 jar Snickerdoodle Jar Mix

Instructions

  1. In a large bowl, combine the snickerdoodle dry mix ingredients.
  2. Mix well.
  3. If you are making the recipe as a jar mix, store the mix in an airtight container and attach the preparation instructions below.
  4. If you want to make the cookies now, preheat the oven to 400°.
  5. In a large bowl, cream the butter with a mixer until light.
  6. Add the eggs and beat on low speed until the mixture is smooth.
  7. Add the Snickerdoodle Mix.
  8. Continue to beat on low speed until the dough begins to form.
  9. Combine the sugar and cinnamon in a small bowl.
  10. Shape the dough into quarter sized balls.
  11. Roll the dough balls in the cinnamon and sugar blend.
  12. Arrange on ungreased baking sheets 2 inches apart.
  13. Bake for 8-10 minutes or until light brown.
  14. Cool on wire racks.
When making this easy snickerdoodles recipe as a jar mix, attach this note to the jar:
 

To Make The Snickerdoodle Cookies:

1 cup shortening or butter

Mix 2 Tbsp. sugar and 2 tsp. cinnamon
 
Preheat oven to 400°. In a large bowl, cream the butter with a mixer until light. Add the eggs and beat on low speed until the mixture is smooth. Add the Snickerdoodle Mix and continue to beat on low speed until the dough begins to form. Combine the sugar and cinnamon in a small bowl. Shape the dough into quarter sized balls and roll in the cinnamon-sugar blend. Arrange on ungreased baking sheets 2 inches apart and bake for 8-10 minutes or until light brown. Cool on wire racks. Makes 5 dozen cookies.

This homemade all purpose cleaner recipe makes my absolutely favorite cleaner for my house! I pretty much use this cleaner for 90% of the cleaning done around my house. I just use the Dawn but if you need something a little stronger you can use ammonia.  It’s in volume 1 of our cookbook and I just love the way it makes everything from windows to sinks and toilets shine!

Homemade All Purpose Cleaner Recipe

Ingredients

Units

1 gallon water
2 tsp. Dawn dishsoap OR 1 cup ammonia
1/2 cup vinegar
1/2 cup baking soda

Instructions

  1. Combine all ingredients.
  2. Put into a spray bottle to clean showers, toilets, sinks and counters.

This homemade all-purpose cleaner is great for most cleaning needs. Use all-purpose cleaner to clean your floors. Just spray on and wipe off as you would counter-tops.

This is not a disinfectant. To make it a disinfectant, too, add about 1/4 cup rubbing alcohol to the bottle.

This easy Cheerio marshmallow treats recipe makes a tasty cereal bar similar to Rice Krispies treats, but with Cheerios and peanut butter! It’s a perfect treat for kids’ lunches and after school snacks!

Ingredients

3 Tbsp. butter or margarine
1 pkg. mini marshmallows (6 cups)
1/2 cup peanut butter, smooth or crunchy
5 cups Cheerios cereal

Instructions

  1. Grease a 9×13 pan well.
  2. Microwave the butter in a large bowl on high for 45 seconds or until melted.
  3. Stir in marshmallows, coating with the butter.
  4. Microwave on high 1 1/2 minutes or until melted, stirring after 45 seconds. Watch carefully in case you need to stir more frequently.
  5. Mix in peanut butter and immediately add cereal.
  6. Lightly mix to coat well with the peanut butter.
  7. With a greased spatula or wax paper, press the mixture into the baking pan.

Notes

  • Mix 1 cup of M & M’s or raisins and 1/2 cup of peanuts. Add to the mixture at the same time you add the cereal.

1 cup graham cracker crumbs
12 cups flake coconut
1 (6 oz.) pkg. chocolate chips
1 (6 oz.) pkg. butterscotch chips
1 can sweetened condensed milk
1 cup nuts, chopped

Instructions

  1. Preheat oven to 350°.
  2. Melt margarine in a 9×13 pan.
  3. Add the rest of the ingredients in layers.
  4. Bake for 25-30 minutes.
  5. Cut into bars when cool.

Walnut Butter Cookies Recipe

Fudge is my favorite Christmas candy and this is my favorite Christmas cookie. My mom made these every year. I remember getting up at 5 in the morning before everyone else to get ready for school. I would sit on the kitchen floor with my dog and pop one of these cookies into my mouth and then pop one into my dog’s. We both loved our early morning treat sooo much.

Ingredients

1 cup butter
6 Tbsp. sugar
2 cups all purpose flour
1 tsp. vanilla
1 cup nuts
powdered sugar

Instructions

  1. Preheat oven to 400°.
  2. Cream butter and sugar together.
  3. Add flour, vanilla and nuts.
  4. Roll into walnut sized balls onto a greased cookie sheet and lightly flatten.
  5. Bake for 10 minutes.
  6. Remove from oven, place on waxed paper and sprinkle with or roll in powdered sugar.

Here’s how to clean a burnt pot or pan. It’s not easy to clean a burnt pot, especially if it’s very burned and greasy but this method should help.

How To Clean A Burnt Pot Or Pan?

Mary asks:

“Can you tell me the quickest way to remove years of burned on grease on the bottom of my flat pan.”

“I’ve used Awesome, Scrub Free, and Dawn Dish Detergent (the one used for cleaning oil from the birds during Valdez oil tanker that ran aground in Alaska).”

“With the combination of the three, some has come off with hard elbow grease, but would like to use one product that would make it easier.”

 

Tawra: I am the queen of burning things. One time I even melted the tea kettle to the burner! No kidding, Mike and mom still tease me about it. I have tried over the years many things to save my pots and pans. Here’s what I do.

I wasn’t clear if you meant the bottom of the inside of a pan or the outside, so I’ll address both.

 

If you mean to clean the inside of the burnt pan, these two things work the best:

  • Place a generous amount of baking soda (about 1/2 cup) in the bottom of your pan. Make sure it covers the bottom of your pan. Fill with water and then simmer for an hour or so. Most of the burnt on stuff should come right off. You can do this more than once if needed.
  • If the grease doesn’t all come off the burnt pan with the first method then I take a razor blade and scrape off the last of the burned on food. I scrub with an SOS pad and after that the pans are usually good as new!

If the burnt on grease is on the outside bottom of the pan, then go straight to the SOS pad and scrub hard. Unfortunately, the only easier way we have found to deal with this is to buy a new pan, which was the first thing Mike recommended when he noticed “quickest” and “easy” in your question ;-).

A milkshake is really just a mixture of ice cream and milk, so it’s easy to make a basic milkshake just by blending together your favorite flavor of ice cream and some milk until you get the right consistency. This candy bar milkshake recipe calls for chocolate or vanilla ice cream, but you can easily modify it by using your favorite flavor of ice cream.

You can use any kind of candy bars you like, so feel free to experiment! You can also add your favorite fruit like cherries or strawberries. If you keep the consistency thick, you will end up with something like a homemade blizzard. If you prefer your milkshake thinner, you can add more milk.

Easy Candy Bar Milkshakes Recipe

  • Yield: 2 milkshakes

Ingredients

1 cup mini candy bars, chopped
2 cups (1 pint) ice cream (chocolate or vanilla)
1/2 cup chocolate syrup
1 1/4 cups milk
whipped cream or whipped topping (optional)

Instructions

  1. Chop candies in a food processor. They are easier to chop if they are partially frozen.
  2. Add the rest of the ingredients.
  3. Mix until blended.
  4. Top with whipped cream or whipped topping if you like!

This recipe makes a thick milkshake. Add 1/4 cup milk for a thinner shake or adjust milk as desired. Makes 2 milkshakes.

Notes

  • If you prefer a more lively milkshake, you can use any flavor of ice cream you like. Berry ice creams often compliment chocolate well, so feel free to experiment!
  • If you like, you can add fruit like cherries, strawberries or bananas.
  • This milkshake recipe calls for chopped mini candy bars, but you can use larger bars and cut them into smaller pieces. You can also use chocolate chips.
